This Festive Bikini – A Recipe

WHere is a home-style take on a drink from a new drinks list. It's a large-volume prepared mix that is packed full of flavours associated with Christmas time, which makes it excellent for a holiday party. Reserve the remaining syrup you can use for morning drinks, puddings, or to make additional servings of bikinis.

Bikini Recipe

Yields 10 guests

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Drink (makes 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

For the Cordial: Combine all the ingredients into a pot, bring to a simmer, mixing so the sugar melts. Next, take off the burner allowing it to cool down fully. Decant into a sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for about a month.

Preparing the Cocktail Base: Pour every spirits and syrup into a big jug, let it rest for one hour, then filter it best through a fine cloth, making it completely strained.

To serve: Add 85ml of the cocktail base into a mixing glass filled with ice, and agitate gently for about 60 seconds until cold. Strain into a cold coupe glass or a similar vessel, garnish with a few cranberries adding the final touch using a light spray of the essential oil over the top.
